Known for years as a sugar free, low calorie, premium bulking agent, Litesse® has a clean taste and provides a creamy mouthfeel. It is a versatile ingredient that is easy to use and is well tolerated compared to other sugar replacement and fibre ingredients. As it is a high molecular weight ingredient, Litesse® can be used for added body and to control crystallinity.
When blended with the polyol sweetener Lactitol in frozen desserts, Litesse® can provide the optimal freezing point depression required to make a scoopable product with a soft and pleasing texture.
A blend of Danisco ingredients — Litesse® and Lactitol in conjunction with Grindsted® Stabilizer Systems — can provide freezing, eating and meltdown characteristics comparable to traditionally sweetened ice cream.
