Litesse® Physical Properties

Polydextrose is a low-molecular weight randomly cross-linked polymer of glucose with an energy utilisation of 1 kcal/gram. It is prepared by the bulk melt polycondensation of glucose and sorbitol with small amounts of food grade acid in vacuo. All possible glycosidic linkages with the anomeric carbon of glucose are present: including α and β 1-2, 1-3, 1-4 and 1-6, although the 1-6 linkage predominates. It has an average degree of polymerisation of 12 and an average molecular weight of 2000.
